- 2 x 250 gram Pre-made pizza bases with tomato sauce
- 200 gram Mozzarella cheese (grated)
- 180 gram Baby red potatoes (very thinly sliced)
- 1/2 small Red onion (thinly sliced)
- 1 1/2 tablespoon Olive oil
- 1 tablespoon Rosemary leaves (in small sprigs + extra, to serve)
- 1 Fennel bulb (trimmed, fronds reserved, thinly sliced)
- 1 bunch Asparagus (thinly sliced)
- 80 gram Baby rocket leaves
- 1 tablespoon Balsamic vinegar
- 1/4 teaspoon Chilli flakes or sliced fresh chilli (optional)
Instructions
- Preheat oven to 220°C (200° fan-forced).
- Place pizza bases on 2 large baking or pizza trays. Top with half the cheese, potatoes and then remaining cheese. Squeeze sausage meat from casings and drop small pieces onto pizza. Top with onion and brush pizzas lightly with 1/2 tablespoon oil. Sprinkle with rosemary and season. Bake for 12 to 15 minutes or until sausage is cooked and cheese is melted and golden.
