Our recipe soaks chicken thighs in a lemon-based marinade with a spicy hint, thanks to the mustard.
Thighs have a higher fat content than breast, which means they retain moisture and flavour, making them a simply delicious cut.
You can use either skin-on or skin-off thighs (or even bone-in thighs or chop) for this recipe. Leaving the skin on will give you an irresistible crispy layer full of texture and flavour.
The cooking time in this recipe is optimised for boneless chicken thighs. They take slightly less time to cook than the bone-in variety, so in this case, adjust your cooking time accordingly.

Ingredients
- ½ cup Chicken stock
- 2 tablespoon Olive oil
- 3 tablespoon Lemon juice (freshly squeezed)
- 2 Garlic (minced)
- 2 Dijon mustard
- 1 Oregano (dried)
- ½ Thyme (dried)
- 1 Chicken thighs
- Salt and ground black pepper (to taste)
- 1 ½ Vegetable oil
Instructions
- Mix the chicken stock, lemon juice, lemon zest, olive oil, garlic, Dijon mustard, thyme, oregano, 1 ½ teaspoon of salt and 1 ½ teaspoon of pepper in a medium-sized bowl.
- In either a large bowl or ziplock bag, mix the chicken with the chicken stock mixture. Leave to marinate for at least 2 hours to overnight. Remove the chicken from the marinade.
- When you’re ready to cook, heat the oil in a cast-iron grill pan over medium to high heat. Add the chicken in batches in a single layer and cook until thoroughly cooked and golden brown. This should take around 4 to 5 minutes on each side. The internal temperature should be 74 degrees Celsius.
- Serve immediately.
