Very little effort is required. Simply marinate the chicken for up to two hours, place all the ingredients in a baking dish and cook for 45 to 60 minutes.

The lemon, olive oil, garlic and thyme lend a Mediterranean flavour to this recipe, while you’ll get a hint of the exotic with the tamari sauce.
The carrot and onion complete the combination of flavours, making this a hearty meal full of delicious layers of taste.

What about substitutions?
Recipes for chicken thighs can also use chicken chops, with the skin either on or off. When you use chops, you’ll get extra flavour and nutrients from the bones, so they’re worth snapping up when you see them at your local free-range butcher.
If you don’t have cannellini beans to hand, you can also try this recipe with chickpeas, kidney beans or fava beans, all of which have a similar nutrition profile.
We’ve suggested tamari sauce in the recipe, but you can equally use soy sauce, which has a more subtle taste.
A simple rustic dish with marinated chicken, cannellini beans and thyme.
Ingredients
Marinade
- 2 Lemons (jiuce of)
- 4 tablespoon Olive oil
- 3 tablespoon Tamari ((or soy sauce))
- 2 garlic cloves
Main Dish
- 8 Chicken chops
- 1 large Carrot
- 1 can Canellini beans (rinsed and drained)
- ¼ Onion (roughly chopped into chunks)
- 1 handful Thyme (fresh) ((roughly ½ cup))
Instructions
- Preheat oven to 180°C/355°F
- Prepare the marinade for the chicken. Place the chicken in a large dish and pour over half of the marinade over the chicken ensuring evenly coated. Place the other half of the marinade aside. Cover the marinated chicken and place it in the fridge for 20min to 2 hours depending on how much time you have.
- While the chicken is marinating chop the onion and the carrot.
- Place the marinated chicken in a large baking dish. Arrange the cannellini beans, carrot and onion in between the chicken thighs. Pour the remaining half of the marinade over all of the ingredients in the dish. Roughly scatter the sprigs of thyme on top of the chicken. Sprinkle with salt and pepper if desired.
- Cook in the oven for 45mins – 60mins, or until the chicken is cooked through.
