Lemony thighs with just a hint of spice
Our recipe soaks chicken thighs in a lemon-based marinade with a spicy hint, thanks to the mustard.
Thighs have a higher fat content than breast, which means they retain moisture and flavour, making them a simply delicious cut.
You can use either skin-on or skin-off thighs (or even bone-in thighs or chop) for this recipe. Leaving the skin on will give you an irresistible crispy layer full of texture and flavour.
The cooking time in this recipe is optimised for boneless chicken thighs. They take slightly less time to cook than the bone-in variety, so in this case, adjust your cooking time accordingly.
Chicken is not only delicious and versatile but full of nutrients too. You’ll find plenty of protein, along with vitamins B6 and B12 and minerals, including niacin, selenium and phosphorus, in each serving.
It’s low in calories too, so it is the ideal choice for anyone watching their weight. The high protein content can make you feel fuller for longer, offering an extra bonus for anyone who’s health-conscious.
One of the things we love most about chicken is that it can be used in so many ways. Roast a whole chicken for a traditional family dinner, throw spicy marinated wings on the barbie or use breasts in salads or baked dishes.
We’ve chosen thighs for our recipe. They’re quick and easy to cook and offer delicious moist, dark meat oozing with flavour.
Add wedges and coleslaw for the perfect dish
Spicy potato wedges make the perfect accompaniment to this dish. For an alternative to regular white potatoes, choose sweet potatoes. They are extremely high in vitamin A, which plays an important role in many processes in the body, including the immune system, vision and reproductive health.
Sweet potatoes are also rich in antioxidants to help protect your body against disease.
Homemade coleslaw completes this dish. Combine strips of carrots, cabbage and onions with mayonnaise, white wine vinegar and salt and pepper for a side serving of vitamins and minerals!
Juicy and flavoursome thighs that are just perfect for family meals or BBQs. The herby, citrusy marinade draws out the chicken flavour perfectly.
- Mix the chicken stock, lemon juice, lemon zest, olive oil, garlic, Dijon mustard, thyme, oregano, 1 ½ teaspoon of salt and 1 ½ teaspoon of pepper in a medium-sized bowl.
- In either a large bowl or ziplock bag, mix the chicken with the chicken stock mixture. Leave to marinate for at least 2 hours to overnight. Remove the chicken from the marinade.
- When you’re ready to cook, heat the oil in a cast-iron grill pan over medium to high heat. Add the chicken in batches in a single layer and cook until thoroughly cooked and golden brown. This should take around 4 to 5 minutes on each side. The internal temperature should be 74 degrees Celsius.
- Serve immediately.
